9 Bean Soup

So I know it's been a fair bit since I've posted anything. It seems life has gotten away with me!!! I guess that happens sometimes :)

So here's a recipe for bean soup. I'd heard about the 15 bean soup before but we didn't want the ham flavor that comes in the 15 bean soup package, so we decided to just come up with our own soup recipe. We just started grabbing bags of beans and what we came up with is this...

What You'll Need...

  • Crock Pot
  • Pinto Beans, 1/2 cup
  • Black Beans, 1/2 cup
  • Baby Lima Beans, 1/2 cup
  • Great Northern (White) Beans, 1/2 cup
  • Green Split Peas, 1/2 cup
  • Red Kidney Beans, 1/2 cup
  • Lentils, 1/2 cup
  • Yellow Split Peas, 1/2 cup
  • Pink Beans, 1/2 cup
  • Whole Grain Brown Rice, 1/4 to 1/2 cup
  • Frozen Corn, 1/2 to 1 cup
  • 2 Red Potatoes, cubed
  • 2 Carrots, pealed & sliced
  • 2 Celery Stalks, sliced
  • 1/2 Yellow Onion, diced
  • 6 Cloves garlic, sliced
  • Vegetable Stock, low fat, low sodium
  • Water
  • Jane's Crazy Mixed up Salt
  • Dried Parsley
  • Garlic Salt
  • Seasoning Salt
  • Salt & Pepper

Combine all ingredients in Crockpot and mix well. Seasonings will be to taste, but you'll likely need at least a Tablespoon of each. Once you've added your beans and vegetables, pour in your vegetable stock. If you don't have enough liquid to cover your bean mixture add your water. You want enough liquid to cover the beans plus a quarter inch or so of liquid. You can add more or less liquid depending on how thick you want your soup. This recipe makes a LOT of soup. You should soak your beans overnight so you know how much they are going to expand and then judge your liquid measurements by that. When I made this recipe I didn't soak my beans and I ended up needing to move some of my soup into a second crock pot ... I ended up with two crock pots full of soup!! You may want to consider revising the recipe a little depending on the number of people you need to feed. Don't worry if you end up with too much though, this will freeze beautifully!!!
